Chicken & Waffles – PA Dutch Style (but a little easier)

Some people think Chicken & Waffles is fried chicken ontop of a waffle. WRONG! At least not in PA Dutch country. I was watching Throwdown with Bobby Flay and I could not believe what I was seeing. I almost felt like calling him up to tell him that wasnt REAL Chciken & Waffles. But eh. Why would he listen to little ol me? I mean we are probably the ones doing it wrong. But if so, I dont want to be right! Love me some Chicken & Waffles. And here is how I make it.

 

Start with your chicken. Now I know that a lot of you want easy so I wont do this the REAL way. (Roasting the chicken with the skin and bones.)

 

So grab your boneless, skinless chicken breasts. Rinse and clean them. Season them well.(salt and pepper for those whoe dont know)

The hubs and lil peep are not fond of chuncks of onion and celery so I dice them as fine as I can.

One celery stalk and 1/4 of an onion should be good unless you really like those flavors then add as much as you like. Heat some olive oil in a pan and add the onion and celery and let them get nice and sweaty.

Add your chicken and turn down the heat a little. Cover and let it get nice a brown.

When your chicken is cooked throughout, put it on a plate to cool completely. Keep the broth in the pan from the chicken and set aside.

When your chicken has cooled, take a fork and shred it.

Set this aside and take some butter (about 4 TBSP) melt it in the same pan you cooked your chicken in. Add flour (about 3TBSP) and stir it in (on med-low heat) until it forms almost a paste consistancy. Add the broth and heat to a simmer. Whisking constantly.

Your result is this beautiful gravy. Add the chicken and some salt and pepper. I also add parsley for color.

While this is heating, it is time for the waffles. And like I said to make it easier for you I am not going to do them from scratch but rather, I will use Bisquick.

In a bowl whisk together 2 cups of Bisquick, 1 egg and 3/4 cup of milk.

I use 1/4 cup for each waffle square. Otherwise it spills out of my waffle maker.What a mess that is.

Put your waffles on a plate and spoon your chicken and gravy mixture over top.

My lil peep loved this. He was so happy making mmmmm noises!

SCORE ONE FOR MOMMA!!!!

    This looks fabulous and I LOVE how your son is all into it…near impossible when they are little like that unless it’s ice cream!!!

    I agree with you about the way many people make chicken and waffles, I love your recipe, though I did cheat with store bought waffles since I don’t own a waffle maker “yet” :). Thanks for posting, your recipe is now in my recipe box!!

    I live in Savannah, and am appalled at what they call “chicken and waffles” down here. Chicken and waffles is shredded chicken in a thick gravy, served over warm waffles. The little squares in the waffles are perfect for holding all the chicken and gravy. I usually use leftover chicken, but a rotisserie chicken will do just as well. YUM!

    Yummo! Looks just like my mom used to make. Haven’t had chicken and waffles since we left PA. back in 1972. Thank you for sharing.
